Peningkatan Keamanan Pangan Bagi Pedagang Makanan Rumahan di Cipinang Melayu Melalui Penyuluhan Higiene dan Sanitasi

Abstract

This Community Service Program (PkM) aims to improve hygiene, sanitation, and food hazard control practices among home-based food vendors in the Cipinang Melayu neighborhood, East Jakarta. The program targets 30 home-based food business operators. The program was implemented using a participatory approach through outreach, initial observation, educational sessions, practical training, mentoring, and evaluation. Data were collected through observations, interviews, and questionnaires, and analyzed using descriptive-comparative methods based on conditions before and after the intervention. The results showed improvements across all indicators of hygiene, sanitation, and food safety practices, particularly regarding the use of personal protective equipment, waste management, and food storage. Overall, there was an improvement from the relatively low initial conditions to better conditions after the intervention. Participant satisfaction levels were in the “very high” category. This program proved effective in raising awareness and changing vendors’ behaviors. The approach combining education, hands-on practice, and mentoring proved to be an effective strategy for strengthening food safety and supporting business sustainability.
